Spelt is similar to wheat in appearance but has a tougher husk that helps protect the nutrients inside the grain. Spelt flour has a mild nutty, sweet flavour and it can be used in any recipes that require normal wheat flour. Although spelt contains gluten, it has less than whole wheat or white flour.
