Vegetable curry, a tasty and satiating dish, made with sweet potatoes and veggies, among other ingredients. It’s super comforting and nutritious!

We do not have the following ingredients available yet:

2 cloves of garlic
½ onion, chopped
1cm piece of ginger root
1 zucchini, chopped
½ head of cauliflower
2 teaspoons curry powder (or try garam masala)
1/8 tsp red pepper flakes
450g sweet potatoes, peeled and diced
3 cups baby spinach

You can purchase the following ingredients here:

1–2 tablespoons extra virgin olive oil     AND      2 teaspoons ground cumin

1 teaspoon turmeric powder       AND       1 teaspoons ground coriander, optional

½ tsp salt       AND       ¼ tsp ground black pepper

¼ cup tomato paste      AND      1 400ml can of full-fat coconut milk

1 cup vegetable stock or water      AND     1 tablespoon lemon or lime juice 

 2 tablespoons coconut flour, optional
