This vegan gnocchi recipe is so easy and delicious! The homemade gnocchi only uses 3 ingredients and is pillowy and soft when finished.

About Wow Its Veggie?!:

Victoria Yore is a lifelong vegetarian and “sometimes” vegan. Her mom Linda has been vegan for over 30 years and raised her and her sister vegan for many years.

When she was about 12 years old, Victoria approached her mom and said she wanted to eat cheese and ice cream with her friends and that she didn’t want to be vegan anymore. Her mom let them make their own choices which is why she calls herself a “sometimes” vegan.

For the Gnocchi:

3- 3½ cups chopped raw potatoes, about 1.2kgs

For the White Wine Sauce:

1 cup mushrooms, thinly chopped
¼ cup white wine
¼ red onion, chopped
3 garlic cloves, minced

1-2 teaspoons salt       AND      1½ tablespoons olive oil

For the White Wine Sauce:

3 tablespoons olive oil       AND      ¼ cup walnuts, toasted and chopped

salt and pepper to taste
