This vegan butternut squash soup is simply the best. It’s vibrant and colorful and richly flavored. Made with roasted butternut squash.

Roasted Butternut: 

6 ½ cups (1kg) butternut squash (peeled and chopped

Soup:

1 medium onion (white, yellow or brown, chopped)
1 tablespoon crushed garlic

for the Roasted Butternut:

1 tablespoon olive oil

½ teaspoon dried thyme     AND     ½ teaspoon dried basil

⅛ teaspoon salt     AND     ⅛ teaspoon ground black pepper

for the Soup:

2 tablespoons olive oil

½ teaspoon cumin     AND     ⅛ teaspoon paprika

4 cups (960ml) Vegetable Stock    AND     1 cup (240ml) Coconut Milk (Canned, Full Fat, Unsweetened)

Salt      AND    ground black pepper to taste

1 tablespoon soy sauce or tamari
