Taco Anyday will never be the same after tasting these. Caramelized pineapples, spicy roasted sweet potatoes, cilantro beans, chipotle ranch and crunchy slaw redefines the definition of tacos. I've made these Purple Carrot inspired tacos several times now and there are never any leftovers.

We do not have the following ingredients available yet:

1 sweet potato
1 lime
120g shredded cabbage
240g pineapple (fresh or canned)
1/4 cup vegan ranch dressing (make your own here)
Flour tortillas (make your own here)
1 can black beans (or try ¾ cup dried black beans)
1/3 cup fresh cilantro (coriander), chopped

You can purchase the following ingredients:

1 tsp chili powder, divided     AND     1 teaspoon maple syrup


½ teaspoon pepper    AND     ½ teaspoon mineral salt (or to taste)

1 tablespoon vinegar (champagne vinegar or white wine vinegar)

You might want to try:

¾ cup dried black beans (remember that the beans need to be soaked overnight and cooked before use, but you won't have a tin to recycle)
