A classic potato salad made vegan! This creamy salad is satisfying, delicious and comforting. It can be enjoyed during summer or winter and is very easy to make.

For the Salad:

900g potatoes
1 green pepper chopped
½ red pepper chopped
1 medium onion chopped
¾ cup chopped pickled cucumber or gherkins
Optional:  olives

For the Dressing:

1 can white beans 400g (like Cannelini beans)
3 garlic cloves
fresh dill to taste

40g hulled hemps seeds   AND     1 tablespoon apple cider vinegar

½ tsp salt     AND     black pepper

160ml plant milk 

½ - 1 tsp Dijon mustard

1 tbsp lime juice or lemon juice
