This strawberry spinach salad is full of flavor and super easy to make! Refreshing and delicious, with a burst of sweetness. Serve it as a show-stealing side dish or make a meal of it by adding some protein!

Add the following fresh vegetables and fruit:

For the Salad:

200g baby spinach
500g fresh strawberries (or 350g dried strawberries)
1 avocado, diced (or try feta if you're not eating the salad immediately)

For the Dressing:

¼ cup finely chopped shallot (or spring onion)

You can purchase the following ingredients here:

For the Salad:

½ cup pecans

salt and pepper to taste

for the Dressing:

¼ cup apple cider vinegar     AND     ¼ cup olive oil

¼ cup maple syrup     AND     1 tablespoon poppy seeds

1 tbsp Dijon mustard

OPTIONAL:  Replace the avocado with feta (if you're not serving immediately)

OPTIONAL: If you need something more filling, add quinoa

 

OPTIONAL:  Instead of fresh strawberries, add 350g dried strawberries and a sprinkle of blueberries
