This healthy Mexican Quinoa Salad is a quick, easy, and gloriously make-ahead dish! Tossed in a speedy homemade chili lime dressing, this fiesta quinoa bowl is full of flavour!

For the Salad:

1-2 bell peppers
2 cups tinned black beans (or try 1½ cups dried black beans)
2 large ripe tomatoes
1 cup corn
½-1 cup finely chopped onion (red or white)
¼ cup fresh chopped cilantro or scallions (coriander or spring onions)

For the Dressing:

1 clove garlic (peeled and minced)

You can purchase the following ingredients here:

1½ cups quinoa

You might want to try:

1½ cups dried black beans (remember that the beans need to be soaked overnight and cooked before use, but you won't have a tin to recycle)

for the Dressing:

⅓ cup avocado oil      AND    1 teaspoon chilli powder

½ teaspoon cumin    AND    ¼ teaspoon salt

¼ teaspoon pepper     AND     2 tablespoons white wine vinegar

1 tablespoon lime juice
